UVACIACCIA VITTÒ

How We Found It

Ostuni, on the Adriatic coast of Puglia, is our second home, both literally and figuratively. Nestled in the heart of the historic centro storico is a restaurant that has become our place "where everybody knows our name."

Ristorante Porta Nova is entirely family run, with the matriarch at the helm. To know Vittoriana (or Vittò) is to be captivated by her. She works the restaurant floor most every day, impeccably dressed alongside her dapper son, Mirko. Her unflappable husband, Tonino, and ravishing daughter, Erika weave culinary magic in the kitchen. Vittò floats about the ultra-chic restaurant like a seasoned queen, maintaining an effortless flow even when it's bustling with patrons. She is the epitome of grace.

Not only does this family create the most stupendous dining experience, they're kindness is as rich as their food. They have taken us in from the moment we arrived in town, offering us guidance, friendship and always the best seat in the house. When Mirko started working with a local winemaker to produce this white wine lovingly named after his mother, we knew we had to share it in the US; not just because it's delicious wine at excellent value, but because everyone needs the allure of Vittò in their life.

TERROIR & FARMING

These vines are planted near Gallipoli (on the Ionian coast) in the famous Puglian terra rossa soil. This is an “ex” limestone, due to all the calcium having been leached out by the Mediterranean climate. What remains is an iron-rich clay that oxidizes and turns rusty red in olor. These soils are famous for producing structured wines that contain enviable purity of fruit.

The farming is painstakingly minimal -- no tilling, strip spraying or under-vine agriculture. The grasses around the vines are kept low to encourage air flow. By allowing growth of native plants in the vineyard there is good competition with the vines. Chemical-free farming also allows for a vineyard biome that is rich in good insects, bacteria and microbes. This type of agriculture requires a lot of work but the biodiversity yields fruit with greater concentration.

SUGGESTED USES

There's really not a bad time to drink this wine. It's ideal for pool parties and backyard summer barbecues, at the end of a long work day, weekend brunch and can even make a great base to a delicious wine spritzer. When you need a wine that will please a crowd without breaking the bank, go for this one.

PRODUCTION

The grapes are picked by hand and gently pressed whole cluster to stainless steel tanks. The new juice is cooled and allowed to settle for two days. Once the juice has settled, it is racked off heavy solids to another stainless steel tank for fermentation. As the juice warms, indigenous yeasts begin their work, converting sugar into ethanol, heat and carbon dioxide. The fermentation is kept cool to retain aromatics and allowed to ferment to dryness. Once primary fermentation is complete the new wine receives a little sulphur dioxide as both an antioxidant and antimicrobial. The wine is then aged in tank for six months until bottling.
